Valentine's Day Date Square

Makes 16 squares

  • Preheat oven to 350°F (180°C)
  • Use an 8-inch (2L) square baking dish, ungreased
1 1/2 cups (375mL)rolled oats
1 1/2 cups (375 mL)all-purpose flour
1 1/3 cups (325 mL)packed brown sugar, divided
1/4 tsp (1 mL)salt
1/2 tsp (2 mL)baking soda
3/4 cup (175 mL)butter, softened
1 lb (500 g)pitted dates, chopped
1 1/4 cups (300 mL)water
1 tsp (5 mL)lemon juice
  1. In a large bowl, combine rolled oats, flour, 1 cup of the brown sugar, salt and baking soda. With pastry blender or with a pair of knives, cut butter into dry ingredients until mixture resembles coarse crumbs. Set aside.
  2. In a saucepan over medium heat, combine dates, water and remaining brown sugar. Bring to a boil and cook for 5 minutes or until thickened. Remove from heat and stir in lemon juice.
  3. Assembly: Lightly press one-half of oat mixture into baking dish. Spread filling over base, then crumble remaining oat mixture on top. Bake in preheated oven for 20 minutes or until golden brown. Cool on wire rack before cutting into 16 squares.
